Strawberry Beet Popsicles

Popsicles are a summer stable, but they are usually filled with sugar and other additives. Stay cool and healthy by making these easy fruit popsicles with a healthy boost from beets. 



  • 1 ½ cups of fresh strawberries
  • ½ cup cooked and cooled beets
  • ¾ cup apple juice
  • 1 tsp lemon juice
  • Blend all ingredients together until smooth.
  • Pour mixture into popsicle molds and insert popsicle sticks.
  • Place in freezer for 3 to 4 hours, or until completely firm.
*Makes 5-6 popsicles.
